There is nothing like the taste and smell of hatch chiles roasting! Mmm the aroma permeates the house with their roasted scent. My imagination goes wild with dishes I can use these cuties in. Let's see, in green enchiladas, in beef stew, in picadillo, with cheese in a quesadilla, in chile con queso, add onions and tomatoes to chiles then pour over your sunny side eggs, wow I'm hungry just thinking about them!
In my area they're here for a limited time so I freeze quite a bit for later.
If you have hatch chile in your area run to get some!
